Alchemy
of extremes
Every creative process has its constraints . Dom Pérignon ’ s
is its vintage : an uncompromising commitment to assem -
bling grapes harvested in a single year – and that year
alone – no matter what .
In 2017 , the growing season proved particularly volatile ,
marked by extreme weather events and one of the
earliest harvests in the Champagne region ’ s modern
history . Dom Pérignon nonetheless pursued a deliberate
objective : to push Chardonnay to its fullest ripeness
while exercising measured restraint with Pinot Noir . This
approach required significant risk - taking and a picking
strategy honed over previous early - ripening vintages .
The gamble paid off . The Chardonnays reached
their highest ripeness levels in 12 years , averaging
11 % ABV , while the Pinot Noirs – harvested between
10 % and 11 % – were among the ripest ever after 2012 ,
2015 and 2016 . Quantities , however , were extremely
limited , with only half of grapes making the selection
on certain plots
Vintage 2017 also caps 30 years of research by Richard
Geoffroy the Maison s Cellar Master until 2019 on
the production of Dom Pérignon champagne His final
work upends traditional expectations as the Maison s
most limited volume vintage ever The result is a rare
and deeply inspiring testament which sets the tone
for the Maison s future creativity
